1 medium chopped onion

3 medium carrots
2 stalks celery
1 sprig fresh rosemary
2 springs fresh thyme

  7. Cut the carrots and celery into chunks and place them into the slow cooker.
  8. Cover the slow cooker and cook on high for 5-6 hours, or until the meat is tender.
  9. Before serving, skim off any fat from the surface, remove the bones, and season with salt and pepper.
